Growing up in Australia Chef Big Mike looked forward to Friday school lunches—hot, fresh meat pies from the local tuck shop (bakery) delivered to the classroom. At home, his parents prepared traditional Aussie dishes, including meat-filled pastries made from cherished family recipes passed down through generations.  When his family immigrated to America in the early 1980s, Mike was surprised to find his beloved meat pies were nowhere to be found. Inspired by his parents’ cooking, he began working in restaurants as a teenager, learning from professional Chefs, and developing his skills. Over the years, Mike refined his family’s recipes and continued his culinary path, recreating the authentic flavors of his Australia.
